Fruit Cake

I decided to try this recipe rather than my usual version. This is by far the yummiest fruitcake I have ever eaten! It’s moist and does not crumble.A must try…even if you don’t like fruitcake. This recipe transcends fruitcake.

Ingredients:

  • 1 c brown sugar
  • 1/2 c butter room temperature
  • 4 eggs slightly beaten
  • 3 c flour
  • 3 t soda dissolved in 3 T milk
  • 1 t each cloves, all spice, cinnamon
  • 4 oz whiskey or brandy extract
Mix well.
Add the following:
  • 2 pounds of chopped pecans or walnuts
  • 1 lb candied pineapple
  • 1 lb candied cherries
  • 1/2 box white raisins (8oz)

Directions :

  1. Drop by tsp or small ice cream scoop on a greased cookie sheet.
  2. Bake 250* slow oven 20-25 minutes.
  3. You can roll any cookie dough in wax paper and make slice and bake from frozen cookie dough.
  4. I keep three or four kinds in the freezer all the time so I can just cut off a couple of cookies and have hot cookies any time.!!!
