Auntie Pearline Pumpkin Cake
Ingredients :

  • 3 cups sugar
  • 3 cups flour
  • 1 tablespoon baking powder
  • 1 tablespoon soda
  • 1 tablespoon cinnamon
  • 3/4 teaspoon salt
  • 1-1/2 cup oil
  • 3-1/’4 cups pure pumpkin (large can)
  • 4 eggs (slightly beaten)

Cream Cheese Frosting
  • 1 pound powdered sugar
  • 1/2 cup (1 stick) softened butter or margarine
  • 18 oz . pkg . cream cheese2 tablespoon vanilla extract
  • 1/2 cup chopped raisins or chopped pecans (optional)

Directions :

  1. Blend toghter : sugar flour, baking powder, baking soda, cinnamon and saltin mixer at medium speed until well mixed.
  2. Add oil and continue to beat until dry ingredients are moistened . Add pumpkin and mix again until blended. Add eggs and blend one (1) minute longer
  3. DO NOT OVERMIX!
  4. Turn batter into 3 greased and floured 9″ pans .Bake at 325° — 40-45 minutes.
  5. (If you want thinner ,pour batter into 4 greased & floured 9″ pans)
