- 1 3/4 lb Baby Red potatoes, halved
- 3 Tbsp Butter, melted (I used olive oil)
- 2 tsp dill
- 1 tsp parsley
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp sea salt
- 1/4 tsp pepper
- Preheat oven to 400°.
- In a small bowl mix together melted butter, garlic powder, onion powder, dill, salt and pepper.
- Pour seasoned butter into 9 x 13” baking dish. Cover the entire bottom of the dish.
- Place potato halves in melted seasoned butter cut side down.
- Brush the tops of the potatoes with seasoned butter that has pooled between potato halves. Top with a sprinkle of additional sea salt.
- Bake for 30 to 35 minutes until potatoes reach the desired level of the crispness.
- Bottoms should be nice and golden brown, and crisp.
Serve as a yummy side dish. Also great as breakfast potatoes
