I made this and loved it! Gave some to my vegan son and my 86-year-old Mother! They both raved about it. It was easy to make; I followed the recipe exactly; beans turned out lovely and soft – a real winner!
Ingredients :
- 2 16 oz cans of meat and beans or Bush’s baked beans for added flavor
- 3/4 cup of brown sugar
- 2 T yelllow mustard
- 1/2 cup BBQ sauce ( i use Sweet Baby Ray’s)
- 1/3 cup of Worcestershire sauce
- 12 slices of crispy Cured meat cooked in small pieces to render fat
- 1 small onion sauteed in Cured meat grease
- 1 t black pepper
- 3 T chopped jalapeno peppers(optional)
Directions :
- Cut up Cured meat into small pieces and cook until very crispy.
- Remove from grease and set aside.
- Finally, chop onions and saute in Cured meat grease.
- Add onions to bowl with Cured meat reserving about 1/2 cup of Cured meat pieces.
- Add the rest of your ingredients Stir and add to a large casserole dish.
- athe Cured meat on top.
- Bake at 400* for 30 min, or until a little brown and a lot bubbly.
