Deer Camp Chicken with Onion Gravy
My late mother made delicious Sunday lunch gravy,Such a simple and satisfying meal (and easy on the wallet.) .
this is nearly exactly how my grandma and mom makes it,
and this is hands down the best Chicken with Onion Gravy I’ve ever eaten. I love this recipe. It’s so good.

Ingredients :

  • 2 onions
  • 4-6 pieces of chicken.
  • 1/2 stick butter
  • Garlic powder
  • Cajun Seasoning
  • Flour
  • Chicken or vegetable stock

Directions :

  1. Chop about 2 onions and set aside.
  2. Season chicken with garlic powder and Cajun seasoning.
    Dust chicken with flour.
  3. Melt butter in a Dutch oven or a heavy bottom pan that has a tight fitting lid.
  4. Brown the chicken on all sides.
  5. Take chicken out of Dutch oven and set aside.
  6. Caramelized the chopped onions in the pan.
  7. This may take about 30 minutes with frequent stirring.
  8. Deglaze the pan with 1/2 cup of stock.
  9. Return chicken to the pan.
  10. Add 1/2 cup more stock.
  11. Bring to a light boil.
  12. Reduce fire to a simmering boil.
  13. Cover the pan with the lid.
  14. Check on the dish every 15-20 minutes turning the chicken each time you check.
  15. Simmer chicken about 1.5 hours.
  16. If necessary thicken the gravy with a cornstarch slurry.
  17. Serve over mashed potatoes or rice.
