Creamed Chipped Beef


I remember my mother making this for me when I was a child. Such fond memories of beef in a lightly seasoned smooth cream sauce served over toasted sourdough or European whole grain.

Ingredients :

  • 1 jar dried beef, sliced into thin ribbons
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 4 cups whole milk
  • Pepper to taste

Directions :

  1. Melt butter in a heavy pan over medium heat.
  2. Add flour to the pan and whisk for several minutes to remove the raw flour taste.
  3. Slowly pour in milk and whisk continuously until a thick sauce forms.
  4. Add pepper to taste and stir in the dried beef.
  5. Serve over generously buttered toast.
