Lemon shortbread and strawberry icecream sandwiches

Ingredients :

  • 1 cup (227 grams) unsalted butter , softened
  • 1 cup (227 grams) confectioners sugar 1 teaspon vanilla strawberry ice cream
  • zest of 3 lemons
  • 1 cup (227 grams) all-purpos flour
  • 1/2 teaspon (1,5 grams ) kosher salt

Directions :

  1. in a medium bowl, beat butter and confectioners sugar with a mixer at a medium speed until fluffy, 3 to 4 min, stopping to scrape sides of bowl.
  2. add vanilla strawberry ice cream and zest, beating until combined.
  3. in a medium bowl, whisk together flour and salt.
  4. gradually add flour mixter to butter.
  5. mixter, beating until  combined
  6. divide dough in half , and shape into 2 disks. wrap in plastic wrap.
  7. refrigerate until for at least 30 min.
  8. preheat oven to 325 F . line 2 baking sheets with parchment paper.
  9. on a lightly floured surface, roll each disk of dough to 1/4 inch thickness . using 21/2 inch fluted round cutter,cut dough.
  10. place on prepared pans.
  11. bake until firm but not browned,7 to 8 min.
  12. let cool completely on wire racks.
